1 teaspoon per 8 oz of water. Fluffy leaves like some Oolongs, use 2 teaspoons. For stronger tea use more tea.
There is no hard and fast rules on steeping except over steeping may make tea bitter. If you are unsure, try cooler water and shorter steeping times.
Below are general steeping instructions. For best results, follow the steeping instructions that came with your tea.
To estimate water temperature use a thermometer or wait a 2-3 minutes after the water stops boiling. Then the water temperature should be about 165- 185 F. You can gauge water temperature by looking at the bubbles forming at the bottom of the tea kettle. When pin size bubbles form, the water temperature is about 185F. To take the guess work out of water temperatures, try our electric tea kettle.

This tea really is a unique blend that’s sort of like a desert to me. Creamy feeling. It’s so good on its own but I love mixing it with my matcha green to make an even more full bodied flavor. Even my coffee drinking husband liked it and he’s not a flavor guy. A little bit goes a long way too.
I drink a LOT of tea. Moreover, I drink a lot of earl grey tea and this one is clearly the best in my opinion. I ask for bulk Cream of Earl Grey and Citron Green for Christmas every year!

We visited Canandaigua this past October and found the town, this store and staff/proprietor a pure delight. My wife said then that this would be her long distance tea provider (we’re in San Diego), so for Christmas I went to the website, which is well done and easy to use, and ordered her some tea and a strainer. I was late in ordering, but the order was sent nearly immediately and arrived quickly. I, and she, were thrilled. Thank you!
I love Earl Grey, and thought this would be a pleasant twist on it. The tea leaf blend smells great, but once brewed it tastes like something you shouldn't be drinking. It was very odd, and reminiscent of some kind of medicine. Milk and sugar helped a bit, but I didn't drink the whole cup. I'll see if friends/family like it a bit more than I do.
I love the other teas I've had from this shop so far, so don't let this stop you from trying it. Stick with the sample size though, and not a full bag.
